This week marks a moment I’m deeply proud of.
Remilk, together with Gad Dairies, has officially launched The New Milk range — Israel’s first line of animal-free milk products made with a precision-fermented whey protein.
For me, this launch is more than a company milestone — it’s a professional and personal one. As Remilk’s IP Director, I’ve had the privilege of building and directing the intellectual property portfolio that protects the technologies, recipes, and processes behind this breakthrough.
Turning the vision of “real milk without cows” into reality required not just world-class science, but a strategic IP foundation to support it. Every element — from the GMOs used in our fermentation process to the formulation that recreates the taste and texture of milk — is shielded by a carefully designed IP strategy. This protection allows innovation to flourish safely and sustainably.
Remilk’s technology produces bioidentical milk proteins through precision fermentation, offering the same taste and functionality as traditional dairy — yet with 97% fewer greenhouse gas emissions, 99% less land use, and over 90% less water.
Our first products — a barista-style milk, an everyday milk, and a vanilla-flavored version — are already available in cafés and restaurants across Israel, with supermarket rollout coming soon.
Seeing consumers enjoy real dairy made without cows, after years of research and development, is both inspiring and humbling. It shows what happens when science, strategy, and purpose come together.
To every food-tech and alt-protein founder reading this: strong IP isn’t a formality — it’s the invisible structure that turns innovation into value.
I’m honored to have played a part in this journey, protecting Remilk’s innovations as they reshape the global dairy industry.
